The first American to graduate from the Ecole Sup?rieure de Cuisine Fran?aise, Polly cooked for nine years in some of the top Michelin-starred kitchens in Paris. During this time, she became embedded in the inner sanctum of the culinary world, working directly with international tastemakers allowing her the time and exposure to hone her culinary knowledge and capacity as an accomplished food stylist. Some of the landmark properties she worked in include: La Tour d’Argent, Faugeron, Le Hotel Crillon, Le Dodin Bouffant, Le Toit de Passy and Chez Pauline.
After Paris, she returned to her native Northern California where she founded La Gourmande, a private chef service, and taught at the California Culinary Academy in San Francisco before joining CleanFish in 2007.
At CleanFish, Polly put her culinary know-how to work as an educator, spokesperson and program implementation specialist. She worked with institutions throughout food service to develop custom programs to bring sustainable sourcing into not just kitchens, but across properties as a whole, in a way that makes culinary and business sense. She lead CleanFish’s participation in trailblazing initiatives like Marriott International’s FutureFish program.
Throughout her tenure, Polly represented CleanFish in television, radio and speaking engagements, notably as a featured speaker at Duke University’s Center on Global Change, sustainable seafood panelist at the Chefs Collaborative Chef Summit, and as a member of a food industry export fact-finding mission to Japan to assess post-earthquake consequences to producer communities and the Japanese export trade.
Additionally Polly spearheaded CleanFish Indexing, including creation and oversight of international vetting activities as applied to open-ocean and land based aquaculture systems, wild capture fisheries and global producer relationships. Polly is also HACCP certified.
In 2011, Polly and Alisha Lumea founded Polish to put their skills and enthusiasm to work for an even broader range of sustainability-minded food producers and hospitality groups.

Uyen Nguyen / Co-Founder & Business Development Director, OneVietnam Network

consulting films in the U.S., Uyen left the industry to establish OneVietnam Network, a San Francisco based nonprofit using technology to engage the next generation of Vietnamese worldwide in philanthropy. Under Uyen and her co-founder's leadership, OneVietnam Network has become the largest online network of Vietnamese Americans reaching over 40,000 each month. Uyen serves as the development director and helped raise $100,000 in seed funding from the Ford Foundation. Uyen also serves as the acting executive director of the Asian Chefs Association, a network of Asian American chefs and restauranteurs in the San Francisco Bay Area.
Uyen graduated Magna Cum Laude from the University of California, Berkeley with a B.A. in Economics. Her honors thesis on corporate social responsibility in Vietnam was featured by the University of California, Berkeley Department of Economics.
深谷シネマ代表/NPO法人市民シアター・エフ理事長 竹石研二

27歳で横浜放送映画専門学院(現日本映画大学)で学ぶ。
卒業後、日活児童映画で企画営業に従事。
児童映画が廃止となり、妻の実家の埼玉県深谷市に転居。
地元の生活協同組合で働くが、50歳を機にNPOを立ち上げる。
2002年深谷TMO構想にて、旧銀行を改装した「深谷シネマ」を開設。
2009年、区画整理のため商店街の「旧七ッ梅酒造」の酒蔵を改装して
リニューアルオープン!(60席)。街の映画館として親しまれています。

横浜市 文化観光局 創造都市推進課長
国際協力NGO、神奈川県国際課への派遣後、横浜市で生涯学習支援、ベンチャー・コミュニティビジネス支援等の業務を経て、2004年文化庁芸術文化課勤務。2006年横浜市に復帰後、開港150周年・創造都市事業本部で映像文化都市担当。その後、開港150周年記念事業の担当を経て、2011年度より現職。文化観光局で創造界隈形成担当として、BankART事業の支援、OPEN YOKOHAMAキャンペーン等を所管。
関西ウォーカー編集長 玉置泰紀

1961年、大阪府枚方市生まれ。同志社大学文化学科哲学及び倫理学専攻卒業後、産経新聞大阪本社に入社。記者として神戸支局、社会部で大阪府警本部捜査1課などを担当。その後、編集者に転じ、福武書店(現ベネッセ)で月刊女性誌カルディエ、角川書店でシュシュ、九州ウォーカー、東海ウォーカー、関西ウォーカーを担当した。長崎市観光専門委員、愛・地球博の食の専門委員、経団連の観光専門委員などを務めた。
